How long Thanksgiving leftovers last, dish by dish

Most Thanksgiving leftovers have an estimated quality window of about 3 to 4 days in the fridge, and most of them freeze. The exceptions run both ways: homemade cranberry sauce is closer to 7 to 10 days, and homemade whipped cream about 1 day. Here is every dish with its own window from the USDA FoodKeeper, including common dishes it does not name, then a plan for the days after the meal.

FoodKeeper puts pumpkin and pecan pie at no more than about 2 hours at room temperature. So a homemade or bakery pie goes in the fridge once it has cooled, and back in after dessert. A pie baked the day before spends the night in the fridge, not on the counter. A store-bought pie whose label says it keeps at room temperature is the exception: follow the label, and refrigerate it once it has been cut.

Cornbread and homemade rolls keep on the counter instead. FoodKeeper has no cornbread row, but its homemade muffins row names corn muffins: about 3 to 7 days in the pantry and 2 to 3 months frozen. Homemade bread is about 3 to 5 days in the pantry.

A plan for the days after

  1. Pack it up the same evening
    Split big dishes into smaller, shallow containers so they cool faster, and get them into the fridge soon after the meal instead of at the end of the night.
  2. Put a date on every container
    Label each one with the dish and the day it was cooked. Or add the dishes to a shared list in MyListResort with a date, so the whole house reads the same countdown instead of guessing.
  3. Eat the short windows first
    Whipped cream and opened jarred gravy go first. The turkey, the sides and the pumpkin, pecan and cream pies come next, inside about 3 to 4 days. Cranberry sauce, fruit pie and cheesecake can wait a little longer.
  4. Freeze what you will not finish by day 3
    Turkey keeps about 4 to 6 months frozen. Turkey in gravy and pumpkin or pecan pie are closer to 1 to 2 months, and so are mashed potatoes and meatless stuffing. FoodKeeper does not recommend freezing cream pies.
  5. Make broth while the turkey is still in its window
    Simmer the carcass into broth before the turkey reaches the end of its own window. The broth then has its own: about 3 to 4 days in the fridge or 2 to 3 months frozen, counted from the day you make it.
  6. Clear out what is left
    When a dish reaches the end of its window, or nobody can remember when it was made, throw it out. Harmful bacteria may not change how food looks, smells or tastes, so a sniff test cannot settle it.

The numbers are the easy part. The hard part is remembering on Sunday which container went in on Thursday.
